A Vita-Mix isn’t a requirement for becoming vegan or for making healthier meals and snacks, but it can certainly make the process easier and more fun. I began changing over to a vegetarian lifestyle in 2003 and managed without a Vita-Mix for four years. In fact, I also managed without a blender, and used only a food processor and coffee grinder. While those tools were sufficient for many jobs, I found that I avoided watery recipes that were best done in a blender.
This Christmas, I received the gift of a Vita-Mix, and I love it! I invited my sister and her husband over for a Vita-Mix party, and we put it through its paces. We chopped potatoes, onions, nuts, and dates for various recipes and made almond nut milk, almond butter, creamy potato soup, creamy carrot soup, and peach ice cream—all vegan, healthy, and delicious! What fun!
Since having the Vita-Mix, making smooth and creamy vegan white sauces and cheese-like sauces is fast and easy. I especially enjoy a vegan cheese sauce poured over steamed broccoli and cauliflower on a baked potato.
Although a Vita-Mix isn’t necessary for becoming vegan or for making healthier meals and snacks, it can make the task of food preparation faster and easier and expand the possibilities for good nutrition.

On top of that, this year is closing and the start of a new year is a great time to start those “gonna do’s” that we’ve been putting off for someday. So for me, in 2008, my “gonna do blogging” will no longer be put off; it’s going to be a “doing it” addition to this website. Gosh, that sounds like a resolution! Okay, let’s make it official. I hereby resolve to blog frequently in 2008.
