Vegetable Chowder

Start with Not-'chour Cheese recipe except leave out pimentos and increase water to 2 cups. Blend all until smooth.
Pour into kettle and add:
6 cups vegetables of choice (potatos, carrots, onion, green beans, corn, etc)
1/2 tsp dried basil
1/2 tsp dried oregano

Cook until vegetables are tender.

 

Basic Hummus

2 cups cooked garbanzo beans (or 1 15-oz. can, drained)
1/4 cup lemon juice
1/4 cup sesame tahini
1/4 cup olive oil
2 cloves garlic (or 2 teaspoons garlic powder)
1/2 teaspoon salt
1/2 cup water

Blend until creamy. Chill. Makes 3 cups.

Hummus is delicious on whole-grain bread or crackers, in pita pockets or wraps, as a topping for baked potatoes, and as a veggie dip. Stuff a hummus sandwich or pita pocket with your choice of tomato, onion, alfalfa sprouts, chopped bell peppers, and black olives for a quick and healthy lunch for work or school.

Design your own hummus recipe by adding other ingredients to this basic recipe, such as roasted red bell pepper, onions, tomato & basil, black olives, or your own special blend of seasonings.
