Cucumbers & Onions Salad

4-5 medium cucumbers
1 small onion
1 1/2 cups Vegenaise or other soy sandwich spread
2 tablespoons lemon juice
2 tablespoons turbinado (raw) sugar
1/4 teaspoon salt

Peel cucumbers and slice thinly. To make the salad more colorful, leave several narrow strips of peeling around the cucumber so the edges of the slices have stripes of green and white.

Peel onion, slice thinly, and cut slices into quarters. Add to the sliced cucumbers.

Mix the remaining ingredients together, stirring until smooth and creamy. Pour over the cucumbers and onions and gently mix together until cucumbers are well coated. Cover and refrigerate for two hours or more. Stir before serving.
