Tasty Teff
The gourmet way to start your day off right
1/4 cup teff*
3/4 cup water
1/4 cup coconut milk (optional)
1/4 cup pecan pieces
2 tbsp ground flax seed
1-2 tbsp real maple syrup
Mix teff with 1/4 cup water (or use the coconut milk) in heavy sauce pan and stir until teff is well mixed (this prevents clumping). Add remaining water and coconut milk, bring to a low boil, stir well, and reduce to light simmer. Cover pan 3/4 of the way and simmer for 20 minutes.
Stir well (the nutritionally-dense teff sinks to the bottom), add remaining ingredients, mix well and serve.
Tip: Add an extra 1/2 cup water and you can let simmer for 30 minutes, while you do the rest of your morning routine.
*Teff is the world's tiniest, most nutrient-dense grain. It is native to Ethiopia and a staple in the diets of their olympic athletes. It is a great source of calcium, iron, fiber and many other vital nutrients - and it tastes delicious! Ask your local coop or health food store if they carry it.
