Review of Vegan Meal Foods

  • Bob's Red Mill Vegi Soup Mix is an easy and nutritious soup. It’s made with green and yellow split peas, barley, lentils, and alphabet pasta bits made from whole-wheat flour, spinach, tomato, celery, onion, beets, and garlic. It cooks up in about an hour, and leftovers can be frozen and reheated for meals later—great for packing in lunches. The directions say to stir one part soup mix into four parts water and simmer for about one hour. I cooked two cups soup mix, one quart Pacific Vegetable Broth, and three cups water. I used less water because I like a thicker soup. I brought it to a boil and simmered for about 15 minutes. Then I added two stalks celery, two carrots, and half a large onion, all diced, and simmered for 30 minutes longer. It made a colorful, hearty, and delicious soup—healthy and full of fiber, protein, and nutrients. I ate what I wanted and had enough left over for four more meals. The instructions also suggest blending the cooked soup to make a creamy soup if you want. I’m sure that’s good, too, but I prefer chunkier soups.

  • Fantastic Taco Filling is a quick, easy, and delicious taco mix made with soy protein concentrate and all the seasonings. Just add 1 1/2 cups water and microwave or simmer a few minutes and you'll have the equivalent of a pound of hamburger taco meat but without the cholesterol and fat. Tastes great for tacos, burritos, taco salads, and more. The downside is that it may be a source of hidden MSG.

Frozen

  • Lightlife Smart Ground Taco/Burrito is a frozen meatless taco food that is tasty and makes good tacos, burritos, and salads. I like it but I prefer the texture and taste of the Fantastic brand listed above.

  • Kashi Black Bean Mango is one of the few frozen vegan entrées on the market. It is a quick-fix entree needing only four minutes in the microwave. With a Thai-style flavor, this is flavorful, nutritious, and delicious.

  • Boca Meatless Burgers and Ground Burger are excellent meat alternatives. Be sure to get the Original Meatless Burgers since they are vegan and some of the other Boca products are not. The Original Burgers have a flame-broiled kind of flavor. They don't taste exactly the same as meat burgers, but they're better for your health. The Ground Burger is also vegan and can be used in any dish that calls for crumbled hamburger. I use it in chili, spaghetti, goulash, etc.
